After the success of Paneer Puffs Recipe on my blog, I thought of sharing another version of the same, for the Chicken lovers. Back in India, Chicken Puffs and Paneer Puffs were the two things that I loved to relish with evening tea. Of course, they were ready-made puffs.

And when I heard about these puff pastry sheets being readily available in the US, I had the immediate urge to try them out in my kitchen. And I’ve never been happier. The aroma of the baked puffs brought back all the memories which we had lived for many years.

Ingredients (for the filling)

The filling in these puffs is pretty basic, being chicken breast pieces as main ingredient, and the chicken curry aka chicken masala itself is made of the regular Indian curry masala ingredients like onions, tomatoes, ginger, garlic, some spices, the most important being the Chicken Masala. I use the Everest Chicken Masala and you can easily find it in any Indian Grocery store or even online on Amazon. But do feel free to use whatever is available with you.

Another important component in this curry is Dried Fenugreek Leaves (Kasuri Methi). Many of the curries that I make seem incomplete without these flavorful tiny leaves. A lot of Indian curries have these dried leaves as one of the important ingredients, especially if you are making the famous dish, Butter Chicken, this is a must-have thing.

I have tried different brands of puff pastry sheets but I always come back to the Pepperidge Farm Pastry Sheets. The pastry comes out to be perfectly flaky and delicious. The savory puffs serve as a great homemade snacks option for a picnic or a party. The Curry Chicken Puffs get their flavor from a lot of spices that are added to the puff pastry filling.

How to make Chicken Puffs Indian Style

Here is the step-by-step process to make Indian Chicken Puff Pastry:

  • Thaw the frozen puff pastry sheets as per package instructions. Alongside, once you take out the pastry sheets from freezer for thawing, immediately start working on the filling.
  • For the filling, you need to prepare the Chicken Curry Masala using small cooked chicken pieces (These can be boiled, grilled, baked or even pan roasted chicken breast pieces, or, you can even use raw chicken breast pieces and cook them along with the curry), chopped ginger and garlic, diced onion, chopped tomato, some spices and tomato ketchup. Once the filling is ready, keep it aside for later use.
  • Take the thawed pasty sheet, and cut it into 9 (3*3) squares. Also, preheat the oven to 400 degree F.
  • For making one puff, take the square and roll it using a rolling pin. Apply egg wash to the 4 sides of the sheet (on the side facing up). Add the chicken masala filling in the center of the sheet. Fold the pastry sheet into a triangle carefully. Then, using a fork, prick the folded sides very carefully creating the lines effect. Put the triangular pastry on the baking tray lined with parchment paper.
  • Repeat the above step for all the pastry squares.
  • Finally, apply egg wash on top part of all the prepared pastry triangles. Bake the prepared pastry triangles in the preheated oven for around 18-20 minutes. Once done, remove the baking tray from the oven. Serve the hot flaky chicken masala puffs with a sauce or dip of your choice.

Substitutions & Tips

  • Ready made Puff Pastry Sheets – Feel free to use whatever brand of pastry sheets you have available with you. I have used Pepperidge Farm pastry sheets since those are the best ones from among I have tried till date. This recipe is one of the best Pepperidge Farm Puff Pastry recipes I have made in my kitchen so far.
  • Cooked Chicken – I am using a cooked and grilled ready chicken breast pieces here, very easily available in Costco. It is called “Tru Grill Grilled Chicken Strips“. I have been using this for many of my quick recipes using chicken and love the ease of use and it’s taste as well, it is delicious. You can use any other cooked chicken breast pieces here, as available in your pantry.
  • Raw Chicken – If you don’t have ready cooked chicken pieces available, you can use the raw chicken as well. You can chop the chicken breast into small pieces and saute in a tablespoon or two of oil for around 10 minutes or till done. Keep them aside for later to be used in filling.
  • Vegetarian version – For a vegetarian version of this recipe, you can use Paneer (Cottage Cheese) or Tofu, the recipe for Paneer Puffs is linked for reference.
  • Pastry Sheets Handling – The Pepperidge Farm pastry sheet pack calls for thawing 30-40 minutes at room temperature. I would advise you to check the sheets after 30 minutes, and using them immediately, otherwise they become difficult to handle.
  • Egg Wash – If you want to skip the eggs in this recipe, you can use milk wash in place of egg wash. It will give the similar shine effect to puffs after they are baked.
  • Storing leftover pastry sheets The Pepperidge Farm box contains 2 pastry sheets, and this recipe uses 1. So, to store the other frozen sheet, wrap the sheet tightly in a plastic wrap or a ziplock bag and freeze until next use.

How to make Chicken Curry Puffs (Step-by-step with pictures)

  • (Optional) If you don’t have cooked chicken, then you can cook the raw chicken pieces (cut into small pieces) in a pan with a teaspoon or two of oil, saute for around 5-10 minutes on medium flame till they are cooked completely and in a ready to eat state. Keep them aside to be used in the filling.
  • Thaw the frozen puff pastry sheets as per package instructions. Alongside, once you take out the pastry sheets from freezer for thawing, immediately start working on the filling.
  • For the filling, heat oil in a non-stick pan or skillet and add cumin seeds to it.
  • Once it splutters, add chopped ginger and chopped garlic, and saute for a few seconds.
  • Then, add onions to it. Saute onions till they are light golden (don’t brown them).

  • Add chopped tomatoes and saute them again for a minute.
  • Now, add the spices (salt, coriander powder, turmeric powder, chicken masala, kasuri methi, black pepper, red chili pepper, ground nutmeg and ground cinnamon) and tomato ketchup and saute for another minute.
  • Finally, add the cooked chicken pieces, saute for a minute again and switch off the flame. Keep aside the filling for later use.

  • Take the thawed pasty sheet, unfold it carefully, spread some flour on your kitchen surface (where you want to prepare the puffs) and lightly dust both sides of the sheet.
  • With a rolling pin, roll the sheet from all sides (this is optional).
  • Cut it into 9 (3*3) equal squares as shown in the picture. Preheat the oven to 400 degree F. Prepare egg wash by beating 1 egg in a bowl and keep it aside.
