Homemade Peppermint Coffee Creamer

Ahhh! I'm so excited to finally share this recipe! I made it too late in the year to share it last year, and it feels like I've been waiting FOREVER to finally be able to share it this year. This. Is. SO GOOD! I made more Homemade Peppermint Coffee Creamer after Christmas and drank it into January. And then I used up our leftover candy canes to make makeshift peppermint coffee after that. Seriously. Peppermint flavored coffee is so good! How did I not know about it until now?!

How long is the life of the creamer? I am the only one at home who would be using it, and I would want to know how long it will last in the fridge before it needs to be replaced. Thank you!

I go by the date on the milk/cream/half-and-half used to make it. It might be stable even a little longer because it was heated.

AMEN! I get so tired of not being able to find it. Milllstone used to offer can dy cane coffee, but SMuckers , who owns Millstone, said they discontinued it due to it not selling. ARE YOU KIDDING ME? The bin was AWAYS empty when I went to buy it and when it was full, I made sure to buy a 5 lb bag! Now.... 🙁 I can't peppermint coffee or creamer! Its aggravating!!!

I made this once before and the peppermint was WAY too strong. I cut it down to 1/2 teaspoon of extract so it's not quite so strong. It is so good and I don't have to search all over town for it when they decide to sell, IF they decide to stock it..

So good! We did find the peppermint to be a little overwhelming though. The final sweet spot for us was 1/4 teaspoon. I would recommend starting off with less, and slowly increasing it to taste!
