No holiday cookie collection is complete without gingerbread. Gingerbread men and gingerbread houses are both classics – but they do take an awfully long time to make. What with rolling out the dough, cutting out all the pieces, baking them, and decorating them one by one, they’re more like a craft project than a cookie recipe.

Now, all that is great if what you really want is a fun activity for the family to do together. But what if all you want is the cookies – and you want them as soon as possible?

Then, my friends, the solution is to turn your gingerbread cookies into bars. All you have to do is mix up the batter, spread it in the pan, and bake it. Once it’s cool, you can ice the entire pan all at once, and they’re ready to eat.

These Gingerbread Cookie Bars are a classic, dark gingerbread, loaded with molasses, ginger, and nutmeg. They have all the spicy-sweet flavor you expect from this holiday treat, but without the work. And with their cheery red-and-green frosting, they look as good as they taste.

Gingerbread Cookie Bars

Directions:

  1. Using a stand or hand mixer, mix together butter, sugars, and vanilla until creamy. Add molasses, egg, flour, baking soda, ginger, and nutmeg. Blend with hand mixer on medium speed until fully incorporated.
  2. Gingerbread Cookie Bars (4)Spray a square baking dish with nonstick, and spread batter in an even layer all over it. Bake for 20 minutes at 350 degrees F. Cool 15 minutes before adding icing.
  3. Gingerbread Cookie Bars (5)To make icing, blend milk and powdered sugar together, along with food coloring. Drizzle all over your bars, and add sprinkles.
  4. Cut into squares and serve.

Ingredients

  • 1 stick softened butter
  • ½ cup sugar
  • cup brown sugar
  • 1 tsp vanilla
  • cup molasses
  • 2 tsp baking soda
  • 2 cups flour
  • 1 egg
  • 1 tsp ginger
  • 1 tsp nutmeg
  • sprinkles

  • Icing

  • 1 cup powdered sugar
  • 1 tbsp milk
  • Green and/or red food coloring

Instructions

  • Using a stand or hand mixer, mix together butter, sugars, and vanilla until creamy. Add molasses, egg, flour, baking soda, ginger, and nutmeg. Blend with hand mixer on medium speed until fully incorporated.
