A Harissa Chicken Sheet Pan Recipe With Potatoes And Broccoli

We toss chicken thighs in a hot honey glaze before roasting with potatoes and broccoli in this spicy-sweet sheet pan dinner. Once you have harissa on hand, you’ll find yourself adding it to everything, including our Sheet Pan Harissa and Cabbage. Soft Scrambled Eggs and Pizza love a little dab, and swirling a spoonful into Whipped Feta Dip would be divine on a sandwich or with a plate of crunchy vegetables.

What is Harissa?

Harissa adds a spicy depth of flavor to any dish, and can be used as condiment, dip, or marinade. It’s a hot pepper paste made with roasted red peppers, herbs, spices and olive oil. Like any good condiment, recipes vary from maker to maker (we love a secret family recipe, and for store-bought we often look for Villa Jerada brand!). It originates from the Maghreb in Northern Africa, and Tunisia is the largest contributor to the world’s supply of harissa. Its cultural and culinary impact is so significant that the United Nations recently recognized harissa as part of Tunisia’s Intangible Cultural Heritage!

Ingredients For Sheet Pan Harissa Chicken And Potatoes

Aside from the obvious ingredients–honey, harissa, and chicken–you’ll need the following to make this easy sheet pan dinner:

  • Baby potatoes and baby broccoli – Potatoes and broccoli are reliable components for any sheet pan meal. Potatoes get golden and crispy and broccoli becomes the best version of itself. Check out our Mini Italian-Style Meatloaf Sheet Pan dinner for another great potato and broccoli pairing.

  • Tahini – Sesame paste is a key part of many a delicious Sauce, Hummus Dip, and Dressing.

  • Couscous – We like to serve a big bowl of fluffy Couscous with this dinner, but good old White Rice or Brown Rice would be an easy addition.

How to Make This Sheet Pan Chicken Dinner

  • Crank up the heat! This dinner is cooked in a hot oven (400°F!)

  • Make the harissa glaze. Mix the harissa and other ingredients in a large bowl.

  • Toss the taters. Layer the sauced potatoes on a rimmed baking sheet, cut side down so they get nice and crispy.

  • Toss the chicken. Place a cooling rack on top of the potatoes and set the chicken on top of it. This way the chicken will crisp up and the chicken juices will drip onto the potatoes, and everything will be that much more flavorful! We use this method for our Roasted Tandoori Chicken too.

  • Cook the broccoli. When the chicken is done cooking, remove it and the cooling rack from your sheet pan. Toss the broccoli with the potatoes and return to the oven for another 10 minutes, or until broccoli is tender.

  • Make the tahini sauce.

  • Serve! Drizzle tahini sauce over the chicken. Sprinkle with sesame seeds and parsley and serve with couscous.

How to Store And Variations For Honey Harissa Chicken

  • If you find yourself with leftovers (and that’s a big if!), they’ll be good in the fridge for 3-4 days.

  • You can also freeze the harissa honey chicken once cooled, using it within four months.
