HOW TO STORE AND REFRESH TABLE BREAD

Artisan loaves should be served within 1-2 days of bake. As a rule, “white” loaves like Baguettes and Como will dry out more quickly than hearty loaves containing whole grains.

Loaves should be stored overnight in the paper bag they came at cool, dry room temperature. Refrigeration does not improve overall shelf life. For extended storage, immediate freezing is best.

How to freeze bread for longer storage

Place bread into a plastic bag and date the package for food rotation. Loaves may be stored for up to 2 weeks in freezer. For optimal results, product may be double bagged.

Thawing & refreshing unsliced bread

Thaw frozen loaves at room temperature for 1-2 hours. Leave product bagged and sealed while thawing.

For a fast thaw, remove loaves from bag, wrap in foil and place in 325°F oven for 15 to 20 minutes.

To refresh any unsliced loaf, first sprinkle liberally with water, then place in 400°F oven for 5 to 7 minutes. This will improve the crumb and character of the interior.

HOW TO STORE AND REFRESH ROLLS

Store in original packaging at cool room temperature for up to 3 days. Avoid storing plastic bagged product in hot spots in the kitchen. For longer storage, seal in plastic bags, date and freeze. For optimal results, product may be double bagged. Use within two weeks for best quality.

Thaw sliced bread, buns and dinner rolls at room temperature for 1-2 hours. Leave product bagged and sealed while thawing. Once thawed, store at room temperature for up to three days.
