Ingredients
- 9 oz. (1 cup) 260 g (250 ml) ricotta cheese
- 2 2 large egglarge eggs
- 1 tsp 1 tsp vanilla extract (optional)
- ½ cup (2 oz.) 120 ml (55 g) almond flour
- ½ cup (32⁄3 oz.) 120 ml (110 g) erythritol
- ¼ cup (¾ oz.) 60 ml (22 g) cocoa powder
- 2 tsp 2 tsp baking powder
- 1⁄3 cup 80 ml peanut butter, crunchy with salt

Making low carb simple
Instructions
Instructions are for 6 servings. Please modify as needed.
Preheat the oven to 300°F (150°C) and set aside an 8 x 8" (20 x 20 cm) baking dish lined with parchment paper.
In a big bowl, add the ricotta, eggs, and vanilla. Whisk until combined.
Add the almond flour, erythritol, cocoa powder, and baking powder. Mix until smooth and combined.
Pour the batter into the baking dish and smooth the surface with a spatula if needed. Add dollops of peanut butter on top. Use a knife to swirl the peanut butter into the brownie batter by dragging the tip through the batter.
Bake for 20 minutes, or until the filling has set but is still soft. Set aside to cool.
Cut into pieces and serve warm and eat it with a spoon or let it cool completely if you want a firmer brownie that you can eat with your hands.

Not a fan.Didn't like at all. I haven't found many desserts that are KETO that I actually like.

A taste for these treats may come with time or you may decide they just won't be part of your keto life. Either is okay as long as you are happy with your journey and seeing progress.

These should freeze and thaw well. We have not tried microwaving them.

These are very good! The taste is relatively "light", not uber-chocolatey like some brownies can be. The texture is also relatively light and fudgy, not dense or thick (I still have to taste it once completely cooled, though). The peanut butter ratio is just perfect : you can taste it, but it's not overwhelming. I microwaved mine a bit to facilitate the pouring and swirling. I had to cook it almost twice as long as indicated; maybe using a glass baking dish and skim-milk ricotta cheese did make a difference.
It's an absolute treat. Congratulations to Jill and Diet Doctor!

Are you supposed to use powdered erythritol or granulated? It doesn't say which one, so I used granulated and mine turned out very mushy and wouldn't solidify even though I had tried to bake them for another 10 minutes or so.

It shouldn't matter which one you use for the brownies to solidify. It could be a result of the peanut butter, some are more oily than others. Also ovens can vary, which could be the reason for the longer cooking time.

Silly me left the ricotta in the car overnight only to discover this when I was ready to make them! I subbed non-fat greek yogurt instead. They are delicious. Because of the lower fat in the yogurt they turned out very much like a lava cake. Let them sit for 20 mins or so before diving in spoon first. Deliciously weird! :-) ps, they took about 30 mins instead of 20 to cook. Lower fat too!

I preferred these brownies after they sat in the fridge for a couple of days. The flavor intensified and was very satisfying. I like that they’re higher in protein. I’ll be making them again.

the taste was great but the texture too gooey for me. I also had to cook them a bit longer -30 minutes or they seemed raw. . to be fair , I like a cake like brownie more than a fudge like brownie anyway. but these were more like a molten lava cake. cake or fudgelike , to me a brownie can be eaten by hand not with a fork. . any suggestions for firming them up? an extra egg maybe ? or a bit more almond flour or baking powder? I dont' want to make (and eat) 3 more batches to fine tune it if someone else can do it and fill me in:)

Different brands of baking powder have differing amounts of sodium. You may prefer a lower sodium baking powder.

Very tasty! And so quick and easy. We actually cut it into 9 squares because it seemed like such a huge serving when cut into 6!
My 2 low carb teens (one of which is recently diagnosed Type 1 and this didn't impact her BS at all!) and I loved them. Not a very strong or sweet flavor as someone else mentioned, but once we topped it with a little bit of homemade vanilla (mason jar recipe on DD) and a few peanuts sprinkled on top this was like a very rich dessert you might get at a local restaurant. I did cook it for 15 minutes longer (in 5 minute increments) before it fully set.
