Below are some basic instructions for taking care of your pie after you leave our shop.

How long do your pies keep? What's the best way to store them?

We serve our pies at the shop at room temperature, so you are welcome to keep them on a cool counter, out of direct heat. If you won't be serving your pies for a day or two, you can also keep them in the refrigerator (in the box is fine). We recommend letting them come up to room temperature before serving.

Fruit pies are best stored at room temperature and eaten within 2 days of purchase. However, they can also be refrigerated for up to 5 days.

Custard pies (ex. Sweet Potato Coconut, Cardamom Tahini Squash, or Apple Butter Custard) are best eaten within 2 days of purchase if stored at room temperature. However, they can also be refrigerated for up to 1 week.

Chess and nut pies (ex. Salted Maple, Hot Cocoa Chess, or Brandy Pecan) are best eaten within 3 days of purchase if stored at room temperature. However, they can also be refrigerated for up to 1 week.

Meringue pies (ex. The Banana Pete or Honey Lemon Meringue) are best eaten within 2 days of purchase if stored at room temperature. However, they can also be refrigerated for up to 4 days.

Can I freeze my pie?

While we do recommend eating our pies fresh and within a few days of purchasing, many of our pies are suitable for freezing.

For proper freezing, tightly wrap the pie in plastic wrap twice. When you're ready to thaw, unwrap the pie and allow it to thaw completely at room temperature, on a cool counter (typically at least 24 hours). We recommend letting the pie come up to room temperature before serving. See below for heating instructions.

Can my pie be reheated?

As a general rule, pies with meringue topping, chess pies, and custard piesare not recommended for serving warm (they will melt in the oven and won't hold their shape).

To warm a fruit pie from the fridge or from room temperature, heat the oven to 300º F and warm for 20 minutes, checking the pie by placing your hand over the center to see if it is fully warmed (more time may be required).

To warm your pie straight from the freezer, heat the oven to 350º F and warm for 20 minutes, checking the pie by placing your hand over the center to see if it is fully warmed (more time may be required).

What size are your pies? How many people does 1 pie serve?

Our pies measure 9" in diameter, and typically serve 6 - 8 people.

What's the best way to slice my pie?

We slice our pies in 8 in the shop, however, for serving at home most of our pies can be sliced into 10. The fruit pie slices tend to lose their shape the smaller they are cut, so we recommend keeping it at 8 slices for those particular flavors.

For chess, custard, and nut pies: Use a sharp chef's knife to cut through the pie. If needed, use a paring knife to make sure the crust edges are cut all the way.

For lattice, crumble, or full-top pies: Use a serrated knife to saw through the top layer when you are cutting through the pie. It works much better, and won’t crush the crust or crumble topping. If needed, use a paring knife to make sure the crust edges are cut all the way.

For meringue pies: Before cutting through the pie, warm your chef's knife in hot water and dry off completely with a towel. The heat will help the knife make clean cuts through the meringue and not crush it. Take your time with these!
