For the coconut flakes, I like to use this unsweetened shredded coconut. I don't mind buying it in bulk since I use it for making granola bars and in cookie recipes frequently.However, if you only want to buy a little, you can find smaller packages at Whole Foods or Trader Joes.

- 4 oz cream of coconut
- 1 cup fresh pineapple chopped
- 2 cups pineapple juice
- ⅓ cup coconut flakes
Instructions
Add the prepared fruit and the rest of the ingredients into a high-speed blender.

Cream of coconut is a smooth, thick liquid made from fresh coconuts. It is thick and very sweet and maybe found in the ethnic foods section of your grocery store; look for Goya or Coca Real brands. If you need a substitute for cream of coconut you can use 1/2 cup light cream plus 1/8 teaspoon coconut extract for this recipe. Enjoy!
