Once you've noticed the problem, the only solution is to protect the crust and pop the pie back in the oven. If you look in the oven and see that your pecan pie crust has turned a perfect golden brown, you'll instinctively want to take it out -- even if the filling is too jiggly or even soupy.

The outer edges of the pie should be firm while the center will be a little jiggly, but not sloshy or unsteady. As the old adage goes, "It needs to jiggle like Jell-O but not wiggle like a wave." If the entire pie is wobbly, continue baking.

Why is my pumpkin pie not done in the middle? ›

The Jiggle Test

Of course, you also want to know how to tell if pumpkin pie is done without slicing a crack or poking a hole in the filling. The best way is to gently shake it: When the pie is done, it will jiggle just slightly in the center; however, your pie should not be liquidy in any way.

Is heavy cream or evaporated milk better for pumpkin pie? ›

During my testing of pumpkin pies, I tried lots of different milk options – heavy whipping cream, regular milk (I used 2% in my testing), sweetened condensed milk and evaporated milk. Ultimately, I found heavy whipping cream to be the best. It produced the creamiest pie in my opinion.

Which is better for pumpkin pie, condensed milk or evaporated milk? ›

As the name suggests, sweetened condensed milk makes the pie sweeter and gives it a denser, creamier texture. Evaporated milk, on the other hand, yields a lighter, airier result. Evaporated milk isn't sweetened either, which is why you can't simply swap one thickener for the other.

The trick is to substitute cream cheese for the condensed milk that's typically added. This not only creates a drier filling that doesn't dampen the bottom crust, but also gives the filling a tangy flavor that boosts its pumpkin-iness without masking it.

Why is my pumpkin pie runny after baking? ›

Signs Your Pumpkin Pie is Overcooked

While a wobbly, runny pie is a telltale sign that a pumpkin pie is undercooked, an overcooked pumpkin pie is a bit harder to spot. When you've overcooked a pumpkin pie, you may see: The filling separating from the crust. The filling has visible cracks.

How long should pumpkin pie set before eating? ›

Remove the pumpkin pie from the oven and place it on a cooling rack. Let the pumpkin pie cool at room temperature for up to 2 hours. Once the pumpkin pie is cool to the touch, loosely wrap it in plastic wrap. Place the pumpkin pie in the refrigerator and store it there for up to 4 days.

Should pumpkin pie be solid after baking? ›

Gently Nudge It

Similar to how you check a cheesecake for doneness, open the oven door and gently nudge, don't shake, the pie. The outer edges of the pie should be firm while the center will be a little jiggly, but not sloshy or unsteady.
