This simple vegan strawberry tofu mousse has just three ingredients! It's quick and easy to make and perfect for a healthy family dessert as well as an elegant dinner party recipe. Vegan, dairy-free and high in protein too!

If you are looking for healthier dessert ideas for Valentines day then these would be perfect. They are also a brilliant choice if you are just looking for slightly healthier sweet treats for your family.

I am always trying to find ways of making our family's meals a little bit healthier but still tasty and these tofu mousses are definitely winning right now!

If you haven't made a mousse with tofu before then it's easier than you might think. Make sure you get silken tofu and then just whisk it till it's smooth and creamy. Add your flavourings and refrigerate it! It couldn't be easier.

What ingredients are in strawberry tofu mousse?

To make this silken tofu strawberry mousse you'll need:

  • Silken tofu - You have to use silken tofu. This just won't work with any kind of firm tofu as you won't be able to whip it up.
  • Freeze-dried strawberry powder - I like to use the powdered freeze-dried strawberries as it's ready to use and adds colour as well as flavour. If you have freeze-dried strawberry pieces you can blitz them in a food processor to turn them into a powder.
  • Maple syrup - I like to add a little to sweeten the mousse. You can also use agave nectar. If you are not vegan you can substitute it for honey as well.

How do you make tofu strawberry mousse?

To make this silken tofu mousse it is best to use an electric whisk as it's easier to whisk the mousse and get it really smooth. However, if you don't have one, you can use a hand whisk.

First, put the tofu in a large mixing bowl and whisk until smooth and creamy. Then add the freeze-dried strawberry powder and maple syrup. Whisk again. Taste and add a little extra maple syrup if you think it needs it.

Divide the mousse between small bowls or glasses and refrigerate until ready to serve.

Can you adapt the recipe?

Yes, you can use any kind of freeze-dried fruit powder to adapt the flavour of the mousse. Try raspberry, mango or blueberry.

You can also use a different sweetener instead of the maple syrup. You can keep it vegan by using agave nectar or even icing sugar. If you don't need it to be vegan you can use honey as an alternative too.

What can you eat with it?

These tofu mousses are delicious as a dessert by themselves. However, if you want to add something then why not serve some fresh fruit on the side? Some strawberry flavoured shortbread biscuits would be nice too.

How long do they stay fresh for?

If you store these strawberry mousses in the fridge they will stay fresh for up to about 4 days. Cover the top of each one with cling film.

Can you freeze strawberry tofu mousse?

Yes you can! Put each mousse in an individual freezer-proof container and you can store it for at least 3 months. Defrost it in the fridge overnight before serving.

Don't try to heat it to defrost it.

  • 350 g Silken tofu
  • 30 g Freeze-dried strawberry powder
  • tablespoon Maple syrup

Instructions

  • Put the silken tofu in a bowl and whisk it until smooth and creamy.

    350 g Silken tofu

  • Add the maple syrup and freeze-dried strawberry powder. Whisk again.

    30 g Freeze-dried strawberry powder, 1½ tablespoon Maple syrup

  • Taste and add extra maple syrup or freeze-dried fruit powder if necessary.

  • Divide between individual serving bowls and refrigerate.

    Is it possible to substitute with fresh strawberries?

      Hi Lewis
      Yes, it is possible to use fresh strawberries as I have seen recipes online that use silken tofu and fresh strawberries. However, I haven't tested it out and so I am not certain of the quantities. If you used the same weight the strawberry taste would not be as strong so you would need more. I would suggest adding a few, blending and gradually adding more, tasting until it feels right.
