White chocolate raspberry cookies were the perfect treat for us today. We have raspberry bushes and they bloom late in the season. I love this time of year when you can go pick them right in your back yard.

The white chocolate and the raspberries go together so well, it makes it hard to stop eating just one or two. Remember, when you add fruit to cookie dough, the cookies are sometimes a little cakier. However these cookies are kind of in between. They are a little thicker cookie and perfectly chewy.

Sometime the cookies look a little under baked, but they will get firmer after they cool a bit.

  • In a mixing bowl, add the flour, baking soda, and baking powder.
  • In a separate bowl add the butter, sugars, and the egg, mix to combine.
  • Then add the vanilla, mix for 30 seconds to 1 minute.
  • Add the dry ingredients slowly, just to combine.
  • Gently stir in the chopped raspberries and white chocolate chips.
  • Using a small cookie scoop, place 12 cookies on a baking sheet evenly.
  • Bake for 10-12 minutes.

Tips and Tricks for White Chocolate Raspberry Cookies:

  • Make sure to measure your flour out correctly. If you use too much flour, your cookies will be crumbly. Also when you mix them after adding the raspberries and chips, stir them by hand to help get them to stick together.
  • The dough is a little tacky, so I like to use a cookie scoop and I didn’t roll the dough.
  • If you like, you can always put a cookie in the microwave for about 15 seconds and that way it’s like you always have fresh baked cookies.
  • These cookies freeze well, so go ahead and freeze some for up to about 2-3 months.

Ingredients

  • 2 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2 teaspoon vanilla extract
  • 1/2 cup raspberries, slightly chopped
  • 1/2 cup white chocolate chips

  1. Preheat the oven to 350 degrees.
  2. In a mixing bowl, add the flour, baking soda, salt and baking powder.
  3. In a separate bowl add the butter, sugars, and the egg, mix to combine.

  7. Using a small cookie scoop, place 12 cookies on a baking sheet evenly.
  8. Bake for 10-12 minutes or until the cookies are done.
  9. Cool on a cooling rack, then store the cookies in a airtight container.

    These were delicious. The only thing I would change is the fact these had zero salt in them. In my second batch I added 1/2 tsp salt and it took the cookies to the next level. Also, these cookies do not flatten out much at all so I pressed them down with a dab of sugar on a cup…perfect. Thk u so much for sharing this recipe!

      Any time you put fruit into a cookie, they are more cake like. Also if you over mix them, they will taste like flour. One other thing when you are making cookies make sure to use a good quality butter. So sorry you didn’t care for them.

      When adding the raspberries stir them in just a little bit. I think that would be the juice. Maybe over mixing? Or sometimes that can happen when the raspberry juice reacts with baking powder. It can turn the cookie dough blue and the cookies may look a little gray. I hope that that helps. Thank you for taking the time to make these cookies. And thank you for the question.
