Grain-Free Gluten-Free Hot Pockets

What an honor it is to be guest posting for A Thrifty Mom. Being a fellow thrifty mom that I think I am, I care about feeding my family healthy recipes, but still making sure I stick to my weekly grocery budget. I have one daughter that must eat gluten-free and because of a recent health condition I eat grain-free/sugar-free. Life changes when you can’t eat the conventional foods that we all love, especially when you have to make everything homemade. So, finding easy recipes that taste good is my top priority as a busy mom.

Recently I bought my foster children frozen hot pockets, per their request, and my gluten-free daughter asked if she could have some too. I got to thinking how amazing it would be to come up with our very own grain-free gluten-free hot pocket recipe that we both can enjoy, and let me just say we did! These hot pockets are absolutely amazing. They are good to eat hot or cold. My favorite part is how versatile they are. It’s a basic grain-free gluten-free bread recipe, and you can add whatever add ins you would like.

We recently went camping and took these hot pockets with us. I reheated them in foil on our grill and I was pleasantly surprised at how delicious they tasted being heated this way. It was much easier taking these with us and definitely more tasty, than just taking deli meat and cheese wrapped in lettuce. I like having a variety of recipes that we can enjoy, and I am so pleased to be sharing this recipe with you.

Yields: 8 hot pockets, or 12 muffins

Ingredients:

  • 2 cups almond flour, fine ground is best
  • 1 cup tapioca starch
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 3 eggs
  • 1/3 cup milk
  • 3 cups add ins: diced ham, cubed or shredded cheese, olives, pepperoni, and/or veggies.

Directions:

  1. Preheat your oven to 350 degrees.
  2. Grease a foil lined cookie sheet and set aside.
  3. Mix all the dry ingredients together, then add the wet ingredients and mix until well combined.
  4. Measure your add ins, then add them to your dough.
  5. Scoop the dough into oblong shapes and bake in the oven for 20 minutes, or until slightly golden brown.
  6. OR scoop batter into a muffin tin and bake hot pocket muffins for 20-25 minutes, or until slightly golden brown.

Notes: These can be stored in an airtight container, in the refrigerator for 3-4 days. If you would like to reheat them, place them in the microwave for 20-30 seconds. Enjoy!
