Regular Batch Cannabis Chocolate Fudge

  • 3 cups chocolate chips
  • 14 ounces sweetened condensed milk

Best Chocolate For Making Infused Microwave fudge

You can use any chocolate chips, but semisweet chocolate chips are the best. Because the sweetened condensed milk has a large amount of sugar, the semisweet chocolate balances out the flavor. As for brands, most are fine for making cannabis fudge but read the ingredients on the package. If you see flour, it is a sign of poor quality and will no longer be gluten free.

Using Cannabutter to Make Cannabis Fudge

Always make sure you decarboxylate cannabis before making edibles. Please visit the Edibles Tools page for more information. You can use either regular cannabutter or quick cannabutter for making cannabis chocolate fudge.

Dosing Cannabis Fudge

In order to achieve consistent dosing, make sure that your pieces are equal sizes. If you know how much THC is in your cannabutter, simple divide that number by the number of servings to get the dosage per piece.

If you grow your own flower and make your own cannabutter, a few more calculations are required.

How many grams of dried flower are you using in your batch? Multiply that number by 1000. Next, multiply that number by the percentage of THC in your strain. Then, multiply that number by .88 for the conversion of THCA to THC. Finally, divide this number by the number of servings. Here is an example:

Bob used 7 grams of White Widow with 20% THC to make half a cup of cannabutter. He then used half of the cannabutter to make his fudge that he cut into 24 equal sized pieces.

Half a cup of cannabutter yields: 7 x 1000 = 7000 mg x .20 (THC) x .88 (Convert to THC) = 1232 mg THC

Bob used 1/4 cup to make his fudge, so 616 mg THC gets divided into 24 piecces, making each piece 26 mg THC

FAQs

Why didn't my chocolate fudge harden? ›

The amount of time you cook fudge directly affects its firmness. Too little time and the water won't evaporate, causing the fudge to be soft.

How do you harden chocolate fudge? ›

Harden the fudge: Place your container or tins in the fridge for 2 hours, which is the time it takes for the fudge to set.

How long should I beat my fudge? ›

Beat the mixture until it just loses it's shine and becomes very thick (this should take about 5-10 minutes). The longer you beat once it starts to thicken then the more crumbly the final fudge will be. If you like it smooth - beat it only until comes away from the sides of the pan and sticks well to the spoon.

How do you make fudge set up faster? ›

One or two degrees can make all the difference. The syrup can cool down slowly, by staying in the saucepan at room temperature, or you can speed up the process by putting the saucepan in a sink filled with cold water.

How to rescue fudge that won't set? ›

How can you fix soft fudge? Put it in a microwave safe bowl that is large enough that it won't boil over. Reheat it to the boiling point and cook for about 3 more minutes. Then you can beat some powdered sugar into it if this doesn't make it set.

What makes fudge firmer? ›

Cooking is necessary to dissolve sugar crystals and to evaporate part of the water in the cream. The length of this step has a direct impact on the firmness of the fudge.

How to make fudge creamy and not grainy? ›

By cooling the fudge prior to agitation (like in the recipes included in this article), on the other hand, you'll get much smaller, finer sugar crystals and a finished fudge with a smooth, creamy texture. Cool the mixture until it reads 120° F on the thermometer—no stirring. This can take 1 to 1/2 hours.

Do you refrigerate fudge to harden? ›

Do not freeze the fudge to set it. Best way is to just be patient for a couple hours and set it in the fridge.

Is evaporated milk or condensed milk better for fudge? ›

Evaporated milk doesn't have sugar added. The sweetened condended milk is needed as no extra sugar is added to the fudge. If evaporated milk were used then the fudge would not be sweet enough and also would still be too soft unless the fudge is frozen.

What happens if you over stir fudge? ›

Once the sugar has dissolved and the mixture has come to a boil, do not stir it. If you do, the sugar can crystallize, giving your fudge a gritty texture. As you beat the fudge, pay attention to color and texture. Once the fudge loses its sheen and thickens, put down your spoon.

What happens if you stir fudge too early? ›

That smooth, creamy melt-in-your-mouth fudge texture is achieved with small sugar crystals. If the mixture is stirred too soon — when it is warmer than 110 degrees — the crystals will be large and make the fudge grainy.

What is the secret to smooth fudge that is not gritty? ›

Once a seed crystal forms, it grows bigger and bigger as the fudge cools. A lot of big crystals in fudge makes it grainy. By letting the fudge cool without stirring, you avoid creating seed crystals.

Why did my fudge turn out like taffy? ›

If the fudge is very soft and slightly chewy then it is possible that it did not quite cook to soft ball stage and next time the mixture should be cooked to a slightly higher temperature (soft ball is 112-116c/235-240F and a sugar or candy thermometer can help).

How do you know when fudge is ready to set? ›

You know it's ready when a small amount of the mixture dropped into a glass of cold water sets into a soft ball that you can lift out with a teaspoon and pinch between your fingers. Turn off the heat and keep stirring for 5 minutes or until the mix starts to thicken a little.

How to fix fudge that is too soft? ›

How do you fix fudge that is too soft? Bring the fudge back to a boil with 1–2 US tbsp (15–30 ml) of cream. If your fudge is soft or runny, it probably didn't come up to a high enough temperature while it was cooking. Put it back into the saucepan and add 1–2 US tbsp (15–30 ml) of 35% fat whipping cream.

Why did my fudge stay soft? ›

If there is too much evaporation, when the cooking time is too long, there will not be enough water left in the fudge and it will be too hard. Conversely, if the cooking time is too brief and there is not enough evaporation, too much water will remain and the fudge will be too soft.

How long does it take for fudge to fully harden? ›

Proper fudge will set after sitting at room temperature for about 4 hours.
