Check it. I made these pancakes with a box pancake mix. Yea, I’m not too foodie for box pancake mixes. I grew up on that stuff…and let’s be real, it just makes life easier in the morning. No, it doesn’t take much more effort to make 100% homemade pancakes by mixing flours and baking sodaand salt, but these pancakes are like WAYYYY easier… just what you probably need in your life.

And me too if I’m being honest. Box pancake mix is thedifference between eating pancakes at home and going out for breakfast. Saves my life and money. However, I am too foodie for just plain box pancake mix pancakes. Remember, plain pancakes growing up was banana. If we wanted blueberry pancakes it would be blueberry banana and plain was banana. I guessdoctoring up (as my mama called it) the basics is just how I was raised.

Soooooo this is where that extradollop of pumpkin puree comes in….and all natural crunchy peanut butter.

Ingredients

  • 1/2 cup milk
  • 1 egg
  • 1/4 cup pumpkin puree
  • 1/4 cup O Organics crunchy peanut butter + additional for topping
  • 2 tablespoons coconut oil
  • 1 teaspoon pumpkin pie spice
  • 1 cup gluten free pancake mix
  • O organics 100% pure maple syrup, for topping
  • Butter for coating griddle

Instructions

  1. Coat griddle with butter and heat over medium.
  2. Whisk together milk, egg, pumpkin puree, peanut butter, coconut oil and pumpkin pie spice.
  3. Stir in pancake mix until incorporated.
  4. Spoon batter onto griddle and cook until it bubbles on top and begins to form golden crust underneath; flip and cook until both sides are golden brown.
  5. Note: These pancakes are thick and fluffy and may take a little longer to cook than usual.
